For the February Jennie Day Meal we cooked a dish we had never tried before, Sauteed Chicken Fingers with Jasmine Rice topped with Chicken Gravy. We hope everyone enjoyed the meal. We were told the House was full this month, so we prepared 28 take-out containers for the residents. I always have mixed feelings when we hear the House is full, as that means 12 families going through a serious childhood illness, but thankfully the House is open and available to help them. We’d also like to thank Regina Nardozzi for baking beautiful heart-shaped cookies for Valentine’s Day, complete with holiday-themed packaging. These really brightened up the meal presentation!

We would also like to ask for your help in a slightly different way than usual…the Foundation has been providing monthly Jennie Day Meals for over six years, and while there are a few favorites we like to do (like January’s Sausage and Peppers with Roasted Potatoes), we sometimes struggle to come up with something original. If someone has a recipe they’d like to share, please add a comment to this post. There are only a few requirements:
– The recipe should include a protein
– The recipe should scale to 25 – 30 servings
– We will need to pack the meal into individual takeout containers (no serving from open trays)
